Preheat and Prep:Preheat your oven to 300°F (150°C) and line a small baking sheet with parchment paper.
Blend the Berries and Spinach:In a blender or food processor, combine the fresh blueberries and spinach leaves. Blend until smooth, creating a vibrant green-purple puree. If the mixture seems too thick, add a teaspoon of water to help it along.
Mix the Dry Ingredients:In a separate bowl, combine the oat flour, ground flaxseed, and shredded coconut (if using). Mix these dry ingredients well.
Combine the Wet and Dry:Pour the berry-spinach puree into the bowl of dry ingredients. Add the tablespoon of applesauce, and stir everything together until it forms a sticky dough. If the dough seems too wet, sprinkle in a bit more oat flour, a teaspoon at a time, until it reaches a workable consistency.
Roll Out the Dough:Place the dough between two sheets of parchment paper and use a rolling pin to roll it out into a thin sheet, about 1/8 inch thick.
Cut and Spiral:Carefully remove the top parchment sheet. Using a small knife or pizza cutter, slice the dough into long, thin strips. Gently roll each strip into a little spiral shape, like you’re making a teeny-tiny cinnamon roll! If the dough starts to crack, dab your fingertips in water and smooth out the edges as you roll.
Bake to Perfection:Arrange the spirals on the prepared baking sheet. Pop them in the preheated oven and bake for about 12-15 minutes, or until the spirals are firm and slightly crispy around the edges.
Cool and Serve:Remove the baking sheet from the oven and let the spirals cool completely. They’ll crisp up a bit more as they cool. Once cooled, serve one or two spirals to your hamster as a special treat, and watch them nibble away in pure delight!
