Ingredients
  

For the Taco Shells:

  • 2 tbsp whole wheat flour
  • 2 tbsp finely ground oats
  • 1 tsp unsweetened applesauce
  • A pinch of finely ground flaxseeds for extra fiber
  • A dash of water just enough to bind the dough

For the Taco Filling:

  • 1 tbsp cooked quinoa
  • 1 tsp finely diced carrot
  • 1 tsp finely diced cucumber
  • 1/2 tsp finely diced red bell pepper optional, for a bit of color and crunch
  • 1/2 tsp grated apple remove seeds
  • A tiny pinch of ground flaxseeds or chia seeds for that extra nutritional boost

Instructions
 

  • Prepare the Taco Shells: In a mixing bowl, combine the whole wheat flour, ground oats, and finely ground flaxseeds.Add the unsweetened applesauce and start mixing. Gradually add a few drops of water until you achieve a dough that is firm yet pliable.Lightly flour your surface and roll out the dough to about 1/8 inch thickness.Using your small cookie cutter, cut out tiny circles (or fun shapes) to form your taco shells.Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.Gently fold each dough circle over to form a taco shape and place them on the prepared baking sheet.Bake for about 8-10 minutes or until they’re firm and slightly golden. Let them cool completely before filling.
  • Prepare the Taco Filling: While the shells are baking, mix the cooked quinoa (or brown rice) with the finely diced carrot, cucumber, and red bell pepper.Add the grated apple for a sweet touch, and sprinkle a tiny pinch of ground flaxseeds or chia seeds for added nutrition.Stir everything together until well combined.
  • Assemble the Tacos: Once the taco shells are cooled, gently spoon a small amount of the filling into each shell. Be careful not to overfill—just a pinch of filling will do!
